Another Manhattan Clam Chowder

The Ingredients:

1 can of clams 8oz.
1/2 an onion
4 - 6 ham slices(sandwich meat)
2 carrots - medium size
2 celery stocks
1 medium potatoe
2 cups water
1 can tomatoe sauce  - 8oz
thyme
salt
pepper
butter

The Method:

Dice up half an onion and the ham slices and fry them up on medium heat with about 2 table spoons of butter in a 2 - 4 quart pot. Saute until onions are soft and the ham is browned a bit. Turn up the heat and add 2 cups of water, tomatoe sauce, Dice up the carrots, celery, and potatoe and add to the mix. Make the size of the dicing small for all the ingredients - about 3/8". You don't have to do this but I think it tastes better! Add about 1/4 to 1/2 a teaspoon of thyme and black pepper. Salt to taste - careful as it is already salty from the clams and the tomatoe sauce and the ham, unless of course you like very salty foods and want to die young from heart disease

Put a lid on the pot and turn the heat down to low - keep it boiling for about 1/2 - 3/4 hour. This recipe makes quite bit but it is really good kept in the fridge and re-heated for days.

Garlic toast is good with this soup - just in case you care…
