This is good for when you don't have much left in the fridge or you need quick hors d'oerves for dipping in things or as finger food for guests.
Ingredients: Flatten out the Pitas as best you can but leave them whole. Spread mayonnaise right to the edges, not too thick. Sprinkle spices, seasoning salt and parmesan cheese evenly over the mayonnaise. (Use about 1 - 2 tablespoons of parmesan per pita). Pop them in the oven or toaster oven on broil for about 5 - 10 minutes. You need to watch them closely as they sit and do nothing and then suddenly they burn. Take them out when they are just toasty and browned.
Use a pizza cutter or a large knife and cut them right away as they will get all crispy in a few minutes be hard to cut without making a million crumbs. I like to cut them like a pizza x 2, that is quarter it, then again, then again, then again… That probably doesn't make much sense so here is a picture:
You get 16 pieces per pita this way.
