Pretty much any potatoe will work with this but I like the red ones best. This is a great tasty side that goes with a lot of different meals, pork, chicken, beef, fish, etc. The prep time for this one is about 10 minutes, depending on how fast you can chop and whether you use the microwave to do the bacon or not.
Ingredients:
Wash the potatoes to remove any rocket fuel especially if they come from California. Rocket tests in the 60's and 70's left residue contaminants in the eco-system that will never go away until we eat them all... Cube them into 1 inch size pieces and put them into a large pot of boiling water. Add about 1 teaspoon of salt to the water. Cook for about 20 minutes or until a fork can push into them easily. Don't over cook or you will have a pot full of mush.
Chop up the green onions into small pieces and place into a bowl. Crunch up the bacon into bits and add into the bowl with the onion. Add 3 table spoons of butter. (I know, so much for the soaked up grease...) Microwave for about 1 minute or until all the butter is melted. When the potatoes are done, drain the water and pour the bacon, onion, butter mixture over them and mix them up a some. Serve right away.
