Cubed Potatoes with Bacon

Pretty much any potatoe will work with this but I like the red ones best. This is a great tasty side that goes with a lot of different meals, pork, chicken, beef, fish, etc. 
 

The prep time for this one is about 10 minutes, depending on how fast you can chop and whether you use the microwave to do the bacon or not.

 

Ingredients:

 

  • 4 - 5 average red size potatoes
  • 8 strips of bacon
  • 3 table spoons of butter
  • 2 green onions
  • salt and pepper

Wash the potatoes to remove any rocket fuel especially if they come from California. Rocket tests in the 60's and 70's left residue contaminants in the eco-system that will never go away until we eat them all... Cube them into 1 inch size pieces and put them into a large pot of boiling water. Add about 1 teaspoon of salt to the water. Cook for about 20 minutes or until a fork can push into them easily. Don't over cook or you will have a pot full of mush.


While the potatoes are boiling take 8 strips of bacon and cook them until they are crispy. An alternative to cooking bacon in the frying pan is in the microwave. You can purchase microwave bacon cooking plates which are grooved and do a nice job or you can waste a good number of paper towels and use a regular plate. To do this, place 3 sheets of paper towel on a plate, then the bacon layed out evenly across the plate, then two more sheet of paper towel on top. Microwave for 3 minutes on full blast. Take it out  (watch it, it's hot) and flip all 5 sheets of paper towel with the bacon in the middle over. Remove the grease soaked 3 sheets from the top and seperate any bacon strips that are sticking together. Now add another 2 sheets of paper towel to the top and microwave on full again for 2 minutes, repeat once or twice more until crispy. This way does a good job of soaking up all the grease. Let the bacon sit and cool.

 

Chop up the green onions into small pieces and place into a bowl. Crunch up the bacon into bits and add into the bowl with the onion. Add 3 table spoons of butter. (I know, so much for the soaked up grease...) Microwave for about 1 minute or until all the butter is melted. When the potatoes are done, drain the water and pour the bacon, onion, butter mixture over them and mix them up a some. Serve right away.
