Rhubarb Martini

Yes, Rhubarb…
 

So this one is a real pain in the a$$ just to have a drink, but it is real nice looking and tasting! I make it with Vodka, but you could probably use gin if you're weird and like gin.
 
Also, this martini is best suited for the summer, but hey drinking martini's at any time of year is ok.



 



The Pain in the A$$ part:

 

Ingredients:

  • 4 cups fresh rhubarb (or frozen - never tested with frozen though…)
  • 2 quarts water
  • 2 cups sugar
  • Vodka

 

Cut rhubarb into 1 - 2 inch pieces and boil with water for about an hour or two until all the rhubarb is mushy and yucky looking. Pour through a strainer or cheese cloth and into a jug. Huck out the mush. Add sugar to taste, (like making Kool-aid), usually about 1 - 2 cups. This recipe makes a lot of rhubarb juice which you can drink like a fruit juice as well as use for martini's. It is good mixed with soda water or 7-Up or Gingerale.

 

Pour some of the juice into ice cube trays and freeze. Also put your martini glasses in the freezer. Put the rest of the juice in the fridge. Now wait…. When the juice and glasses are finally frozen it is time to drink some martini's.

 

Pour 2 oz of Vodka into a maritini glass and add 1 oz of rhubarb juice and 2 - 3 rhubarb ice cubes. The glasses will frost up when you take them out of the freezer to add more effect to this already cool looking drink. Serve and drink immediately.

 

Repeat.  

 

If I wasn't totally lazy I would put up a picture of a rhubarb martini in a frosted glass right about here....
