I tried for years to BBQ beef ribs without much success. They always seemed to get burned or overdone and landed up too chewy and without much flavor or too much charcoal flavor. After doing some reading and asking around I found out the trick was pre-cooking. Going from raw to the grill just doesn’t work well, not for me anyway… This method works well for beef or pork ribs. It makes a super tender, fall off the bone flavor rich rack of ribs every time. There is no need to go searching for the most expensive ribs either, any ribs will do so find a nice sale on beef or pork ribs is a bonus. Depending on how many ribs you are preparing you may need more than one pot or at least a great big one. Basically you need to boil and simmer the ribs before putting them on the grill. Before placing the ribs in the pot, trimming some of the fat can’t hurt but is not necessary either. Fill the pot with enough water to just cover the ribs. Bring it to a boil and then reduce the heat and simmer for a few hours, usually 2 for beef and 1 ½ for pork. If you really want to go nuts and make the meat super tender you can slow cook them for double or more that time. The concept to all this is to cook and tenderize the beef ribs or pork ribs before you put them on the grill. Adding a few tables spoons of vinegar to the water can also help with tenderizing. Once you have the fully cooked and tenderized ribs it is time to grill them. This step only takes a short time. You can prepare the ribs ahead of time, put them in the fridge and then barbeque them before you eat so they can be served hot and fresh from the grill. I like to barbeque them right on the grills rather than on tin foil or other heat dissipater. It is messy but I find it adds more flavor. Grilling is as simple as: Place the cooked and tenderized ribs on a plate and put a generous amount of BBQ sauce on them. Letting them sit and marinate for an hour or so is also a plus but not necessary. Pre heat the BBQ to a medium heat, but not too hot like steak grilling hot. Place the ribs on the grills and leave the lid open. Stay with your ribs as they can burn easily. Turn them often until things are nicely browned or blackened, depends on how you like them.
